Website Description: Saint John specializes in [Chef] Cook’s take on ‘haute creole cuisine,’ showcasing the evolution of true Creole cuisine in New Orleans, dating back to the 18th century, presenting these flavors in an elevated, yet approachable way.
Our Take: Eric Cook’s first restaurant was Gris-Gris which has been a local favorite since it opened. Cook also did stints at Brennans and Commander’s Palace. With a resume as this, it is little surprise that Cook has brought an elevated take to Creole favorites.
